Board looks fine. I'm running an ASRock board myself (granted, it's Intel) and couldn't be happier with it.

Whether or not 16GB is enough is really up to you. How much RAM do you plan on allocating to these VMs? How many VMs will be running at once? If you give each of the three VM 4GB of RAM, that's 12GB, which still gives you 4GB for the host system. Most consumer boards only support 32GB, so since RAM is cheap right now you might as well just go and max it out now and not worry about it later.

The AMD FX series is indeed a good choice for heavy virtualization and server workloads. See this Phoronix article: http://www.phoronix.com/scan.php?page=article&item=ubuntu_1204_virt&num=8

Overall, the AMD Bulldozer based system performed very close (within a few percentage points) of a much more expensive Sandy Bridge-E system. This is where the SMT-based architecture of Bulldozer really shines.

You will actually need to be a bit wary of your choice of motherboard if you intend on using VT-d/virtualized IOMMU features, e.g. for Xen HVM. Asus AMD boards are known to be iffy. In particular, the Crosshair V formula used in the Phoronix article had issues with Xen HVM. I don't know whether or not this has been resolved or if the bug also affects the Sabertooth board, but I've heard good things about ASRock boards.

Don't listen to all the gamers trying to recommend you an Intel i7-3770K. First of all, the 3770K is NOT a workstation-oriented CPU, as it does not support VT-d, which you will need for Xen HVM or any other hardware-assisted virtualization solution. If you wanted Intel you would need a non-K CPU, e.g. the i7-3770.

Yes, a RAMdisk is theoretically faster due to the much higher bandwidth of DRAM, but you would be very, very hard-pressed to notice any real-world performance difference.

It's just using a low-profile PCB. All you really need is room for the IC chips since everything else is miniaturized enough. The heat produced by modern DIMMs is more or less negligible so the fancy heatsinks are unnecessary too.
