I live in Hong Kong and my girfriend is Hong Kong Chinese. The first time I went over to meet her parents her Mom (who obvisiously preferred her daughter to be dating someone local/Chinese) said: well at least he looks a little bit Chinese. Thank god he doesn't has blond hair and blue eyes.

You can check out serviced apartments to start with. Some are listed on asiaxpat and geoexpat.com or you can browse http://stayin.hk

edit: this is an option only for the first months or so. I recommend taking a short term serviced apartment so that you have some time to explore the city and different districts. Personally I've lived in Mui Wo (Lantau), a few years in mid-Levels and now i'm in Kennedy Town (which absolutely rules).
