Equip the Covetous Gold Serpent Ring found in Sen's Fortress and go fight the knights at Anor Londo to get the Silver Knight Shield. Best overall shield imo, 76 of stability if upgraded fully and weight 5.0. You can get some Silver Knight weapons too from them which scale with dex. The Uchigatana is very good too, fast and inflict bleed status.
