The only tips that got away from the government are cash tips. The computer assumes that you are tipped at least 10% of my cash sales so if someone has a credit card and tips me in cash that is really the only thing that is getting away. Maybe 1/10 people will pay in credit and leave a cash tip so I'm really not skimming that much off the top. And yes, I work (often over) 40 hours a week, 50 weeks per year.

Don't listen to the ATGATT nazis. Your learners course is not too intense and you will rarely if ever go faster than 15 mph. Long sleeve, helmet, gloves, and jeans should be fine.
